Effects of Soy Extract and Sex on Serum and Liver Lipid Levels of the Rat

Abstract
The interaction of soybean extract and sex on serum and liver lipids were studied in young rats. For 4 weeks, female and male Sprague Dawley rats were fed on diets containing casein (control diet) or casein to which 50§· extract (0.226§· as isoflavone/g protein) was added (experimental diet). The extract was prepared by refluxing soy flour with water. The concentration of cholesterol and triacylglycerol in liver and serum were dependent on sex, but not on diet-differences. The excretion of fecal bile acids were higher in male than in female rats, regardless of diet differences. Judging from the present study, it did not seem that the water extract from soybean acted as dietary factor influencing the lipid concentration of both female and male young rats fed on casein as a protein source in the diet.
